An article in ScienceDaily stated that vegetables contain phytochemicals that help battle metabolic processes that lead to obesity and heart disease. Eating foods high in phytochemicals such as salads with olive oil before a meal reduces the portion of unhealthy fat your likely to have for a meal. A research lead by Heather K. Vincent, Ph.D, showed a comparison between two groups of adults, one with normal weight and one that is overweight-obese. The research shows that the group which was obese consumed few foods containing phytochemicals and instead had more saturated-fat containing foods. They also had higher levels of oxidative stress which is one of the main causes of weight gain. Phytochemicals contain antioxidant properties that help combat free-radicals thus it decreases the oxidative stress level in the body. Some examples of phytochemicals are isoflavone from soy, beta carotene from carrots, and lycopene from tomatoes.
So, munch on more bright and leafy vegetables to keep your weight in check!
